The colorful, vibrant, and versatile Indian cuisine has found a great fan base in Australia and the thing that makes Indian cuisine so appealing to everyone is its large variety. Every part of India has its own distinct flavors and according to Ayurveda, Indian food is a balance of 6 flavors: sweet, sour, salty, bitter, spicy, and astringent. Each flavor is imparted from a particular ingredient in a dish and this, is the uniqueness of Indian cuisine.

Scotty, as he's known to the school, is a Chef at Moonacres Kitchen and previously, Chef at Fireworks Cafe in Austinmere for over 10 years. He created and presented a diverse menu including Mexican, Indian, Vietnamese, Moroccan, Carribean and French foods and has a special love and interest of middle eastern and southeast Asian flavours.

Scotty was born at the bottom end of New Zealand and spent most of his time in his dad's vegie garden. He drifted into cooking food professionally and has always enjoyed flavoursome food, ideally things that became more than the sum of their parts, that work together to make something more interesting than the ingredients would suggest.

This class will have you cooking with cashews and black spices, slow cooked cabbage w/ fennel seed, ginger, coconut and pumpkin and leeks with tamarind as well as using fresh produce from Moonacres farm to compliment this immersive cooking experience.  You will learn how to make two quite different dishes, and Scotty will guide you through the different flavours of Indian foods and show you how to use the right cooking techniques to get the best flavours.

At the end of the class, you will take home some of what you have created before enjoying an authentic flavourful Indian lunch with Scotty's homemade dosa and local wines at our shared school table. And a tip, in order to really enjoy Indian food, you should use your hands to eat with the dosa!

There will be a plentiful supply of coffee, Pachamama teas and baked treats.

The class runs from 10:00am - 1:00pm.
