Fernando, Founder and Head Chef at That Spanish Mate

Born and raised in the vibrant city of Barcelona, Fernando brings over 20 years of hospitality and culinary expertise to his catering company, That Spanish Mate, in Sydney. With a deep passion for Spanish gastronomy, he specialises in creating authentic and contemporary paellas and exquisite canapés that captivate both the eye and palate.

Fernando’s love for cooking is deeply rooted in his heritage. 

He grew up watching and learning from his mother in their family kitchen, where traditional Spanish recipes were a way of life. 

His early years in hospitality included working in some of Barcelona’s most iconic tapas bars and traditional eateries, immersing himself in the rich culinary traditions of his homeland. He also gained invaluable experience in front-of-house roles, which taught him the importance of guest experience and attention to detail. Over the years, he had the privilege of working alongside inspiring chefs—many of whom he now considers friends—who shaped his culinary style and encouraged his creativity.

Whether it's a grand wedding or an intimate event, Fernando takes pride in crafting unforgettable culinary experiences, sharing not just food but the culture and heart of Spain.

In this masterclass we will learn how to cook a paella from scratch the correct way. We will do three different paellas including traditional and vegetarian and Fernando will help us to understand the technique of how to use a paella pan.
