We are back again with Ish for his very popular Turkish class.
Ish was born in Australia from parents who originated from Turkey. His Dad, from the town of Trabzon, a city on the Black Sea coast of northeastern Turkey and located on the historical Silk Road. His Mum was from Samsun with its striking natural and historical sites from breathtaking canyons to important historic ruins. Both regions steeped in a deep food culture.
Ish began cooking professionally in his late 20s and fell in love with the environment of preparing food. He soon became known as a cook who thrived in a team that valued simplicity, variety and flavoursome foods. He began working under Serif Kaya from Ottoman Cuisine in Canberra and together they opened Ottoman in Sydney in 2006 at Walsh Bay. Ish then went onto work at Otto in Woolloomooloo and Bistro Ortolan in Leichardt before returning to Turkey to immerse himself into Turkish life.
We are so proud and excited to have Ish at Moonacres Kitchen and part of the school family. His love of family and his homeland brings a kindness and generosity to his cooking, and we are delighted that he will share the foods he loves to eat.
In this class Ish will teach some staple dishes of the Black Sea regions of Turkey including Kisir a traditional and authentic recipe, Mountain Yayla a meadow soup, Karniyarik, stuffed eggplant as well as a popular Turkish ice-cream.
This beautiful cooking class is not to be missed and you will come to understand that there is more to Turkish food than kebabs, dips and baklava. Turkish food is known for its meat-based kebabs and mainly focused on rice, vegetables and bread. Soups are a staple at every meal, and you will learn how to make a high mountain soup using yoghurt, see unique Turkish ingredients and how they’re used including salep, pomegranate molasses, mastik. Importantly, what to look for when choosing certain ingredients.
The class runs from 10:00am to 2pm with brewed coffee, Pachamama tea, school made treats and an abundant Turkish lunch at our shared school table. Ish will send you home with some soup and other treats.
