In 2016, Paddington restaurant Fred's consistently commanded rave reviews for its farm-to-table cooking, centered around an open kitchen. Danielle Alvarez was the restaurant's head chef, bringing her expertise earned at some of California's most prestigious institutions to the table. Under her leadership, Fred's became one of only five restaurants with a female-led kitchen to carry two hats by the Good Food Guide.
Danielle is now pursuing her own creative pathway which includes a cooking show Good Food Kitchen, teaching and writing cookbooks. She is one of our most popular chefs here at the school, and if you've ever been to her classes, you'll know why.
Danielle, like many of us, knows that the dinner table is where some of life’s most important events are contemplated and discussed. Especially so in Italian homes. Over a few hours, as well as numerous dishes, Italians bond with friends and loved ones over the simple pleasure of a good, home-made meal, such as pasta.
It's not uncommon for nonnas to spend hours on Sunday, for example, preparing fresh pasta to be enjoyed later by the whole family. Kneading the dough, rolling it out, cutting, and then filling it is all part of the process – grandchildren will watch, learn, and pass on their knowledge to future generations. In this class with Danielle, she will transport us to Italy to make some iconic pasta dishes.
Sorpresine with ragu Bianco, sage and lemon, Green pici with clams, green garlic and parsley pesto and Doppio ravioli with pumpkin and ricotta fillings. All of which we will sit down afterwards and enjoy together, with a glass of wine by the fire.
This class is immersive and hands on. There will be moments where you can sit back, and watch Danielle demonstrate a method or a technique and listen to her talk about her recipes and her journey as a little girl watching her mum cooking in their kitchen in Miami. Mostly you will be cooking her stunning food side by side around our bench.
During the class from 10am - 2:30pm you'll enjoy brewed coffee & tea and baked treats from the school.
