Stephen Santucci is the Head Chef of Moonacres Kitchen in Robertson. A celebrated chef and much-loved local.
Stephen was formerly head chef at Vini, Surry Hills and learnt his craft in Italy where he spent a number of years working in restaurants, including under the tutelage of Michelin-starred chef, Salvatore Tassa. He credits his career to his grandparents, especially his grandmother, with whom he recalls fondly making 'dried sausage' (they never called it salami) as a child in the basement of her cantina.
Stephen is passionate about creating the same sense of warmth and homeliness with his food.
Tuscany encompasses the best of what made Italy world famous: stunning art cities, extraordinary views, sun, mountains, sea, local products, wine, small artisan shops which boast a long tradition. Every city and region of Tuscany offers different sensations and emotions, thus leading to unforgettable experiences, especially around food. This region is known for the simplicity of its food and Stephen will take you right into the heart of the extraordinary yet simple dishes so unique to this stunning region of Italy. Uncomplicated seasonings and fresh, high-quality ingredients that bring out the natural flavors in each dish.
This four-hour class with Stephen will have you cooking minestra di ceci (pasta e ceci) a typical Tuscan pasta soup of chickpeas. Peposo, a famous hunter beef pepper stew and cantuccini (biscotti). Throughout the class Stephen will share stories, demonstrate techniques and offer personal insights around Italian food, culture and family.
The class begins at 3pm and an abundant and sumptuous dinner will be offered at 6pm with some flavoursome Tuscan reds.
