In 2016, Paddington restaurant Fred's consistently commanded rave reviews for its farm-to-table cooking, centered around an open kitchen.

Danielle Alvarez was the restaurant's head chef, bringing her expertise earned at some of California's most prestigious institutions to the table. Under her leadership, Fred's became one of only five restaurants with a female-led kitchen to carry two hats by the Good Food Guide.

Danielle is now pursuing her own creative pathway which includes a cooking show Good Food Kitchen, teaching and writing her first cookbook, Always Add Lemon.

This will be Danielle's second class at Moonacres, the first selling out within days. And for good reason.

We will start the day with a tour by Phil Lavers, owner and farmer of the award-winning and regenerative, Moonacres farm. A biological world that lives symbiotically with the plants that constitute our entire terrestrial food system. Phil will share how Moonacres works in harmony with the land allowing it to create an environment in which our food plants thrive, where they verily vibrate with the vitality embodied in a healthy living soil.

Danielle and Phil will then guide you along the rows to help harvest some beautiful Autumn produce to take back to the school for the class. Fresh from the soil to the kitchen.

This class is immersive and hands on. There will be moments where you can sit back, and watch Danielle demonstrate a method or a technique and listen to her talk about her recipes and her journey as a little girl watching her mum cooking in their kitchen in Miami. Mostly you will be cooking her stunning food side by side around our bench.

During the class you'll enjoy brewed coffee & tea from Pachamama and baked treats from the school. At the end of the class, you will be treated to an abundant lunch by and with Danielle at our shared school table with wines from Krinklewood. One of a growing number of vineyards farming regeneratively.

The class runs from 10.00am to 4pm. We will meet at the school and transport you to Moonacres Farm in Wildes Meadow. Wear comfortable clothing, hat and walking shoes for the Farm - gumboots are a good choice. Then back to the kitchen for an immersive cooking experience and lunch with Danielle.
