Welcome to Moonacres – where soil, story and sustenance come together. Nestled on 140 acres of rich red basalt soil in the Southern Highlands of NSW, the farm was founded by Phil Lavers, alongside his wife Lisa, as a place to grow not just produce, but possibility.
Phil and Lisa believe in farming with nature rather than against it. They acknowledge the weather, the weeds, the machine failures, the setbacks — and have accepted them as part of the journey.
Every decision they make, from seed to plate, is driven by this ethic: regenerating the land, nurturing the soil, and delivering food that tastes alive. You’ll hear Phil say, “Ultimately everything we eat comes from soil.”
What We Grow & Why It Matters
Here on the basalt-rich paddocks of Moonacres we grow a wide spectrum of certified-organic vegetables and fruits: brassicas, tomatoes, peppers, leafy greens, heritage varieties, seasonal height-value crops, greenhouse production – all managed with crop rotation, cover cropping, and thoughtfully applied fertility.
But it’s not just about what we grow — it’s about how we grow.
We pay attention to biodiversity, soil structure, microbial life, water dynamics and plant health as much as we do the harvest itself. This is where flavour, resilience and genuine nourishment begin.

We’re proud to partner with some of the finest restaurants in Sydney and the region — you’ll find Moonacres produce on menus at venues such as Don Peppino’s, Lankan Filling Station, Fred’s, Ragazzi, Poly, Moxhe, Firedoor, Clove Lane — plus regional gems like Babyface Kitchen in Wollongong, The Press Shop in Bowral, Birch and The Wine Mosaic Lounge in Moss Vale and both Moonacres cafes Moonacres Kitchen and Hearth.
We also supply our own cafés and cooking-school ventures — so whether it’s the plate in front of you or the class you’re attending, you can trace the journey from paddock to plate with confidence.
2026 Farm Tours – A Full-Year, Immersive Journey
In 2026 we’re launching a four-part seasonal farm tour series at Moonacres. This isn’t a one-off trip; it’s your invitation to walk with us through the rhythms of the farm year. Each season you’ll join Phil and the team on site to:
- Feel the soil beneath your boots, smell the first sprouting seedlings or ripening fruit, taste what’s coming straight out of the ground.
- Understand what’s happening on the farm in that moment: what’s growing, why that crop right now, what challenges and opportunities the season brings.
- Gain actionable insights into regenerative farming practices, how they shape our land, our community, our food system.
- See how the produce we grow moves into the kitchens of chefs and cafés you know.
It’s a deep dive into a farm that cares, a food ethic that honours the earth, and a living system that connects land, grower, chef and eater.
