Courtney has long been known for her vibrant, produce-led food—full of colour, texture, and generosity. Her cooking honours the land and the seasons, and in October, when nature is at its most giving, she’ll be joining us at Moonacres School to teach a class all about Spring Entertaining.
It’s a joyful exploration of what it means to eat with the seasons. You’ll learn how to make dishes that are not only delicious, but also deeply nourishing and respectful of the cycle of nature. Together with Courtney, we’ll use spring’s bounty to create a menu designed for sharing—full of flavour, simplicity, and heart.
When food is grown in the rhythm of the season, it doesn’t just taste better—it feels better. And when it’s shared around a table, made with care and creativity, it becomes something more than just a meal—it becomes connection.

Courtney Roulston first rose to fame after finishing as a finalist in Series 2 of MasterChef Australia 2010.
For over 11 Seasons Courtney worked as the Head Chef for the Sydney Swans AFL Team, cooking for the players and working closely with the team dietician to create nourishing meals for over 80 high level athletes.
Courtney has proudly represented Coles Supermarkets for over 15 years as an Ambassador, which involves hosting various events, media appearances and recipe creation for the Coles Magazine. Courtney`s partnership with Coles also sees her working closely with the Stephanie Alexander Kitchen Garden Foundation to help inspire school children across the Country with positive and pleasurable food education.
Courtney is also an Ambassador for one of Australia`s biggest food waste charity organisations, ‘Second Bite’- aiding with their goal of ending waste and food insecurity issues.
Having participated in MasterChef Season 12 (All Stars Back to Win), Courtney now appears as a regular on Channel 7`s breakfast show Sunrise and also hosts the very popular cooking Series ‘Farm to Fork’ which airs on Network Ten and is currently in it`s 7th Season. The show takes Courtney all over the Country to meet Aussie farming Families and create wholesome recipes using their produce.
