Join us for a special day at Moonacres Cooking School as we welcome back the talented Claudia González, a Spanish chef whose culinary roots run deep in tradition and love. 

Claudia, who was formerly at Conscious Ground in Byron Bay, is returning to share a beautiful Spanish feast inspired by her childhood memories of cooking alongside her grandmother. This intimate, hands-on class offers a rare opportunity to experience the magic of Spanish cuisine from someone who grew up immersed in its vibrant flavors and heartfelt traditions.

Spanish food is more than just a meal—it’s a way of life. Rich in heritage, bursting with colour, and brimming with soul, Spanish cuisine celebrates the joy of simple, fresh ingredients prepared with passion and care. For Spaniards, food is a thread that weaves together family, friends, and community. It’s the sharing of abundant plates at lively gatherings where conversation flows.

At its heart, Spanish cooking is about connection. It’s about gathering around the table, sharing stories, and creating memories through the act of breaking bread together. This tradition of hospitality and warmth is something we cherish deeply at Moonacres, and we’re thrilled to bring it to life through Claudia’s skillful hands and generous spirit.

We will learn how to make Claudia’s grandma's delicious and juicy chicken and how to present it for a special occasion. Calçots with traditional romesco sauce and patatas a la importancia, how to make a humble potato shine. Traditional flavoursome food that has been passed down from generation to generation.

Claudia Gonzalez, is originally from Madrid, Spain.

She discovered her passion at an early age and decided to start her studies in the culinary arts at the age of 16. After graduating, she did a stage at the 3 Michelin star restaurant Martin Berasategui and since then worked for some of the best renowned chefs in the world like Ferran and Albert Adrià, Dabiz Muñoz, Paco Peréz, Rafa Zafra and Tony Botella.

In 2018 she moved to Australia, landing in Byron Bay and started working at Conscious Ground, a regenerative Certified Organic farm as their Food Design Manager and early this year she started her own project Square Bites Byron delivering a thrilling twist on traditional take away breakfast and lunch, and through unforgettable private dining experiences.
