Born & bred in Sài Gòn, Việt Nam, Tân came over to Australia as a labourer & worked his trades up to be a handyman to a carpenter. His passion was always cooking & the Vietnamese cuisine.
In 2021, he took a leap of faith to open his 1st restaurant; NỘI Goulburn. The aspiration was to share the simplicity & wholesomeness of the Vietnamese cuisine with the community. The recipes are crafted with love & his specialty is the phở broth, which is cooked over 12 hours with a secret blend of 9 spices.
NỘI Goulburn is a local delight that attracts many travellers passing through Goulburn. Tân doesn't have education & experience in culinary arts prior NỘI besides home cooking for friends & family, but that doesn't define his artistry that seeded from the passion of cooking & the love of feeding people.
Tan will join us for an afternoon of conversation and food, cooking some of his favourite recipes using Moonacres produce for a lunch around our table.
Traditional Nước Mắm (Dipping sauce / dressing) used in most Vietnamese
dishes, will be taught at the class with rice paper rolls, Vietnamese savoury crepes, Chicken Rice Congee with Chicken Salad and a dessert of Mung Bean Dessert Soup (Hot).
Tan has decided on these dishes as they represent a traditional Vietnamese lunch in a village. It's very healthy, light, flavoursome with full of fresh herbs, affordable and everything is Gluten-free.
