Roy has worked across most of the big institutions in Sydney including Quay, Bennelong, Bathers Pavilion and Berowra Waters.
He traveled for two years studying cooking in many of the major countries that specialise in spices and he feels that Mexican food is one of the most underrated cuisines there is in Australia.
This class with Roy is about learning to create Taco's as they do at his upmarket Mexican restaurant and Mezcal bar In Potts Point, Sonora. Their food is fresh with an overarching market to table philosophy.
Tacos can be filled with a wide variety of ingredients, catering to different dietary preferences and tastes. They often include vegetables, lean proteins like crunchy fish, and fiber-rich components like beans and home-made whole-grain tortillas.
