This is a Masterclass in chocolate making and with Christmas only weeks away we thought we’d team up with Jess to learn how to make honeycomb, 3D chocolate Xmas trees with yummy fillings, chocolate barks and ginger Mac bon. We love the idea of hand making gifts. It’s always pretty special to receive something that you know has been made by the person gifting it to you.
This beautiful class will end with a long lunch created by Tommy Prosser.
Jessica has over 20 years of experience in the culinary arts. Her passion and focus is pastry, chocolate and sugar craft. She has travelled the world – working, studying and teaching in some of the finest establishments in the industry. As a scholarship winner, Jessica represented Australia, competing at both local and international levels. As a recipient of distinctions and awards from sweet to savoury she continues to strive for excellence in all culinary endeavours.
Jessica also owns Chocolate Artisan, which has been a leading artisan brand for over 10 years and produces a selection of specialist chocolate products such as bon bons, truffles, barks, chocolate coated nuts and other special orders.
Jessica co-founded South Pacific Cacao as she believed her expertise with chocolate and artisan markets would be able to create something extraordinary for rural communities in the South Pacific.
Tommy and Jessica together, are an inspiring tale of pushing boundaries and a reminder that creativity knows no bounds in the realm of food.
Jessica Pedemont and Tommy Prosser are not just chefs; they craft dishes that challenge conventions and transport people back to a certain time and place through their foods and aromas. This cooking class is the best of sweet and savoury.
Born and raised in East Sussex UK, Tommy Prosser began his culinary journey washing dishes aged 13. Once he qualified as a chef, Tommy went on to hone his craft at acclaimed Michelin-Star restaurants Gravetye Manor and The Waterside Inn. After travelling around Australia in 2010, Tommy stayed and worked in Melbourne as Head Chef at Hobba Coffee & Kitchen, then in Sydney with Single Origin Roasters, running their expanding group of cafés winning multiple awards for each.
In 2015 he established Hospitality Works working as a freelance chef and consultant for a variety of clients and projects in Australia and UK. In 2020 Tommy joined Berrima Vault House in the NSW Southern Highlands, where he enjoyed building relationships with local primary producers and farmers to create menus for dining outlets and events at this exclusive members’ club.
This year Tommy has returned to working as a freelance chef, offering consulting, demonstrations, Private dining, brand ambassadorship, recipe and product development to companies wanting to progress in the industry. Now returning to cook in the highlands for the first time this year, with Jessica to share the foods they love to cook.
