Anna has a commitment to and a passion for sustainable seafood with over 40 years' experience teaching and writing about Australian seafood. 

When cooking seafood, it's all about timing and a fresh seasonal product for the right dish. With delicate fish you need to celebrate with unique flavours and enhance with fresh herbs. For balancing textures with cuttlefish, octopus and squid, pair with breadcrumbs, crispy pancetta or capers.

Seafood has seasons just as other fresh produce and following sustainable seafood choices is very achievable. In this class you will be preparing and cooking Anna's recipes as well as learning how to clean and prepare a whole squid to cook two ways. How to fillet a whole fish and how to bake the whole fish for a table feast.

Mussels - did you know that this delicious mollusc is packed with iron and so quick and easy to prepare and Anna will share the cooked v’s raw options with prawns.

You will take home recipes and tips and tricks for purchasing and storage. At the end of the class, you will be invited to our shared school table to enjoy an abundant seafood lunch with Moonacres fresh produce and local wine.


The class runs from 10:00am to 1.00pm.
