At Moonacres it all starts with the soil and the seasons.  If you've tasted our produce from our popular weekly veggie box, or visited us at a local, Sydney or South Coast Market, you will know what we are talking about! It's all about cooking with the finest seasonal produce.

And we are so excited to introduce Sabine Spindler (@wastewarrior), who has joined Moonacres to head up the new Moonacres venture at Retford Park! In this class Sabine will teach you a style of cooking that gets the best out of seasonal produce. It's about using your veggie box, or what's in season, to prepare for weeknight feasts. With Sabine's prep routines and hacks your seasonal cooking will be intuitive, easy and so delicious!

With a focus on seasonal and local, we start with limitations - a Moonacres Autumn veggie box. Sabine will show you how to get maximum flavour, to be inspired by the produce and create a range of meals and sides, while also not wasting a thing.  Sabine will share practical tips for using and storing your produce that reduces food waste and promotes an intuitive meal plan.

With flavour and deliciousness always at the front of our minds, each ingredient has so many options: from the basics to the building blocks of a dish, through to finessing for maximum flavour.

This class will give you a combination of practical tips and techniques - simple ideas for a range of feasting opportunities. Take a cauliflower...roast it whole, make a puree, a salad, soup or pickle...learn it all!

In this class we will focus on:

  • the bounty available from fresh seasonal produce
  • finding pleasure in being organised...we will provide a little structure for your passion 
  • valuing the beauty of fresh produce - and honouring the whole vegetable
  • ideas for using pantry staples with your fresh produce to create delicious meals
  • different preserving methods and flavour techniques


During the class you will enjoy bottomless tea and coffee, snacks, and at the end of the class we will sit at our feast table to enjoy what we have prepared with a glass of wine. At the end of the class you will take with you some of what you have made as well as recipes and tips from Sabine.

COVID19 - Please note we are running intimate classes of 12, with 6 pairs working together. Bookings may only be made in multiples of 2. These arrangements are to ensure that we follow COVID19 guidelines, and provide a safe and enjoyable class. We encourage group bookings of up to 15 for a fun gathering for family and friends
