Jamberoo Mountain Farm is a thriving, sustainable farm that supplies some of the Southern Highlands and South Coasts' best restaurants, sells its produce at retailers such as IGA supermarkets and weekly farmers markets, and delivers fresh produce to the Moonacre's Cafe and cooking school for our classes.
Nicole and Lachlan value an ecological approach to land management and strive to leave their land in a better condition than when they found it.
But this adventure began with a simple love of eggs!
Living in Sydney many moons ago, their weekend ritual was perfecting eggs benedict. Their quest for the best eggs to poach sparked curiosity, which grew into a leap of faith—and ultimately into chicken farming, with regeneration at its heart.
This experience with Jamberoo Mountain Farm will begin with a farm tour where you'll discover this unique pasture-raised system across 100 acres of lush farmland which naturally improves the soil and in return pasture for the chickens and cows and learn more about regenerative farming. The chickens live in mobile caravans, moving slowly through the pastures, enjoying sunshine, fresh grass, bugs, and red soil—all of which create eggs brimming with flavour and goodness.
Next, we'll collect fresh eggs to take with us to the Moonacres Cooking School, where you'll learn how to cook the perfect Eggs Benedict using all locally sourced produce which is a celebration of the produce that so closely surrounds us—including the eggs you just gathered. You'll also get to take home a dozen of your freshly collected eggs to enjoy for more poaching during the week.
Before heading back, we'll pause for morning tea in the paddock, soaking in the beauty of the farm, before returning to the kitchen to whip up a delicious lunch together.
Comfortable clothing, farm boots / gumboots are required, hat recommended as it's a working farm with strict biosecurity.
Bus will collect our group at the school at 9:45am and arrive at the farm by 10:00am. We will head back to the school at 12:00pm to cook and share some food around our table.
