Heading straight to Tuscany, home of the Cavolo Nero, we will be bringing you Sourdough Focaccia with Cavolo Nero, Pines Cheddar and Red Elk. The focaccia will be prepared then topped with greens, from both Moonacres & Duckfoot Farms, and baked.
For the mains, we will be travelling over the Gran Sasso in Abruzzo for their pinnacle dish, Ragu al' Abruzzese - Pasta with Lamb Ragu. The pasta will be finished with a generous dusting of pecorino cheese and a bitter fresh bite of raddichio from Moonacres farm.
Remaining on the east coast, we'll head down south to Puglia to finish on a sweet note with a Torta al' Arancia, a pulpy, full and flavoursome orange cake made with burnt butter. These oranges are from our very own Fiona in Kangaloon.
